It’s FRI-DAY! I am SO glad it’s finally here. Don’t get me wrong, I truly enjoy my job, and the awesome team of women I get to work with, but I also love my weekends with my husband. Plus my husband is participating in a partner competition at a local Crossfit affiliate tomorrow, and I’m very excited to watch those guys compete, they are going to be amazing!
Today’s story comes from my friend Mandy. Mandy and I used to work together, plus we both have a love for fitness, so we have competed together as well, she is incredibly strong-both physically and emotionally. Mandy is an amazing wife to her husband, Brent (who is also referred to as “The Bearded Man”), and a mother to her two kids. I hope you enjoy her story, and have a wonderful weekend.

“My strength comes from the Lord. The day I fell on my face and needed strength beyond measure, HE proved that His strength was enough.
I received a call that someone was trapped in the grain bin, on our farm. I knew that my husband, Brent, had been working on our large, dangerous, grain storage building. My first words were ‘people don’t live if they are trapped in a bin’. I drove the two miles, to that part of the farm, with my two babies. As I arrived I saw more that 20 emergency vehicles, and many neighbors. They were cutting holes in the grain bin and trying to get someone out. I walked through the mess…a baby on each hip. I felt like it was slow motion. People trying to stop me. I needed to get up there. I needed to know. My mom saw me and screamed. ‘No, no Mandy!’ She ran to me. ‘It’s your dad.’ I handed her my babies and ran until I could see Brent. I knew that if I had been looking at my dad right then, he would have begged the Lord to take my husband’s place. After my dad’s death I struggled for years. Depression, guilt, anger. I gained 50 lbs the year after his death in 2004. I lost 50 lbs in 2015. Ten years with many ups and downs, but my God is good, and I always go back to the strength He gives.”
What is Mandy’s definition of Sugar and Strength?
“Oh taste and see that HE is good. ” I am bitter, my flesh is weak. Sweetness is only in me because He is in me. I am weak. I am made strong when I surrender to Him.”
I know I’m a little behind on the “chia pudding train”, but I have been reading the benefits of chia seeds and decided to give it whirl. Below is a healthy sweet treat for a mid morning or afternoon snack. This is very easy to put together, and is best when made in advance and left to sit in the refrigerator overnight.
Depending on the type of protein powder you prefer, this can be Paleo or Vegan, I am using whey protein below because that’s what we currently have at our house 🙂
Peanut Butter Chocolate Chia Pudding
Yields: 2 Servings
- 4 TBSP Chia Seeds
- 3/4 C. Almond Milk
- 1/4 C. Water
- 1 TBSP Unsweetened Cocoa Powder
- 2 TBSP Natural Peanut Butter
- 1 Scoop Chocolate Protein Powder (Your choice)
- Splash of Vanilla Extract
- Pinch of Salt
- Enjoy Life Mini Chocolate Chips (optional)
- Combine chia seeds, almond milk and water together in a small container with a lid, allow to sit in the refrigerator over night
- Note: After the ingredients are combined and put into the refrigerator, after 30 minutes, go back and stir the mixture and put back into the refrigerator, this will help keep the seeds from clumping together
- Next morning, add the remaining ingredients and stir until well combined, divide in half, top with mini chocolate chips and enjoy!
Nutrition Per Serving: 18-20 G Protein, 16 G Fat, 12-14 G Carbs
